Named for the sweet, deep-fried rice cakes that used to be a Creole staple, Calas features a tasting menu-style appetizer that combines shrimp, jambalaya and andouille versions of calas, all served with a green onion pepper jelly dipping sauce. The grilled seafood platter includes Gulf fish with roasted tomato and caper buerre blanc, baked oysters Rockefeller, a barbecue shrimp spring roll and crabmeat ravigote.
